I am a firm believer that everyone needs a pick me up now and again. One of my friends recently had foot surgery and has been out on medical leave. She has been stuck in the house, is unable to drive, and has had a difficult time adjusting to this new transition. I decided to surprise her with one of her favorite dessert items, coconut macaroons.
I have never had or made a coconut macaroon before so my goal was to find a recipe that was not only simple to follow but also easy to make again in case I messed up. The recipe, which is listed below, only contained 7 ingredients that could easily and cheaply be purchased at the grocery store. The ingredient list includes water, granulated sugar, light corn syrup, salt, sweetened shredded coconut, egg whites, and vanilla. The key to this recipe is to make sure the egg whites are whipped to the perfect consistency. If they are too runny the macaroons will not hold together.
I decided to get a little creative and dip the macaroons in some chocolate after they cooled for about 10 minutes. To make the chocolate dip mixture, I poured 3 cups of semi sweet Hershey's milk chocolate chips into a bowl. I then added 1 tablespoon of brown sugar and 2 teaspoons of cinnamon into the bowl. I then microwaved it until all of the chocolate chips were completely melted, about 2-3 minutes. I then dipped each macaroon into the chocolate mixture and placed them (chocolate side down) on a sheet of parchment paper. I then used a fork to drizzle the chocolate on top of each macaroon. I placed them in the fridge to set for 15 minutes.
My friend and her family really enjoyed these chocolate dipped coconut macaroons. I would definitely recommend these to all the coconut lovers out there and to those who would like to create something new.
