Let Them Eat Cake

Making homemade baked goods from scratch is rewarding but can sometimes be time consuming. First you have to make sure all of the ingredients are accounted for which may include a trip or two to the grocery store. Then, depending on what you are making, you have to carve out time to prep, bake, and decorate your baked item for the recipients. Sometimes, all of these things can not be done in one day especially when you factor in how busy we all are. That's why I love recipes like these cake mix cookies. They are easy to whip up and still allow you the freedom to include those homemade personal touches.


The cookie dough mix consists of 1 (18.25 – ounce) box cake mix, 2 eggs, 1/2 cup vegetable oil, and 1 cup add-ins like chocolate chips, sprinkles or M&M’s. What I like about this recipe is that it gives you flavor combinations to try based on the type of cake mix you choose to use. I loved this recipe so much that I decided to try five different combinations. The first was red velvet cake with white chocolate chips. The second was white cake mix with rainbow sprinkles. For this cookie I added some vanilla extract to give it more of a rich flavor. The third combination I tried was chocolate fudge cake mix with peanut butter chocolate chips. I also a chocolate fudge cake mix cookie with M & M's. For this one, I added a little bit of cinnamon to help intensify the chocolate flavor. The last combination was milk chocolate cake mix with espresso chocolate chips.


Despite getting a little carried away, I really enjoyed being able to mix and match and explore new flavor profiles. If you want a little simplicity in your life, I would recommend adding this recipe, which is list below, to your list. It has that made from scratch feel without having to worry about time management or breaking the bank. I hope you enjoy this as much as I did.
